The fresh salads and produce served in our restaurants start right here on Nevis, but are not grown in the island’s rich soil.

The lettuce, tomatoes and fresh herbs are grown at a local hydroponics farm, which has been supplying us with fresh produce for more than 10 years. 
Hydroponics is an eco-friendly farming method to preserve water through recirculation. It is also a more efficient way to provide food and water to the plants. The term “hydroponics” comes from the Greek words “hydro” (water) and “ponos” (labor).
When dining on the hydroponics produce, you will only notice how fresh it tastes. The flavor and nutritional content is the same as traditionally farmed items.
The produce isn’t the only item from the hydroponics farm taking center stage in our Great House. Lloyd Williams, who works at the farm, is a talented musician and entertains our guests regularly in the lounge.
